Clean Supper Club Valentine's Day Collaboration with Indigo Herbs

We’ve been busy in the Clean Supper Club kitchen experimenting with delicious ingredients from Indigo Herbs, to create the most delightful collection of scrumptious recipes for sharing this Valentine’s Day.
 
We both have a sweet tooth and live by the belief that we never want to feel like we are missing out on amazing flavours and indulgent foods. This is a goal for all of our recipes.
 
Our Clean Supper Club recipes are not only delicious they are full of super nutrition that will boost your Valentine’s!
 
This is the first of two Clean Supper Club blog posts with Indigo Herbs all based upon
FOOD FOR LOVE.
 
A taste we cannot live without is obviously chocolate!
In these first three Clean Supper Club recipes we had to share with you the amazing taste of real chocolate. For this we have used the heavenly scented Organic Raw Cacao Powder from Indigo Herbs.
 
 
Cacao & Raspberry Smoothie Bowl

 
Why not start your day by sharing the Clean Supper Club Cacao & Raspberry Smoothie Bowl?
At Clean Supper Club we adore our breakfasts and this beautiful combination of berries and chocolate is so good we eat it for breakfast or enjoy as a dessert.
 




Recipe
Serves 1 large bowl
 
Time to prepare
10 minutes
 
Ingredients

  • 2 handfuls of frozen raspberries
  • 2 large dates
  • 1 heaped tbsp. of Indigo Herbs Organic Raw Cacao Powder
  • ½ tsp. of Indigo Herbs Organic Vanilla Powder
  • 1 handful of oats
  • 1 tbsp. of Indigo Herbs Flax Seeds
  • Around 150ml coconut cream (depending on thickness)
  • 2 tbsp. unsweetened nut milk
  • For the topping - a few raspberries, Indigo Herbs Organic Raw Cacao Nibs & unsweetened desiccated coconut
 
Equipment
Blender or Food processor
 
Method
1. Place all ingredients into the high-powered blender (or a food processor) and blitz until smooth. If mix is too thick add another tbsp. of coconut cream.
 
To Serve
The Clean Supper Club way of serving - spoon smoothie mix into a bowl and scatter with unsweetened desiccated coconut, Indigo Herbs Organic Raw Cacao Nibs and beautiful fresh raspberries.
 
 
 
Goji Berry, Rosehip & Cacao Hearts
(Raw cookies)
 
Our Clean Supper Club Goji Berry, Rosehip and Cacao Hearts taste so naughty, you won’t believe they are truly healthy!
 
Our family and friends do not believe us when we repeatedly tell them that there are no processed sugars, fats or scary additives in these tasty treats (that aren’t really a treat because they are so good for you (are you following us?))
 
Serves
Makes around 15 hearts (depending on size of your cutters)
 
Time to prepare
15-20 minutes
 
Storage
Store in an airtight container and in the fridge if it’s warm. Keep for up to 7 days.
 
Ingredients
  • 1 cup of soaked cashew nuts (ideally soaked overnight or for a minimum of 3 hours)
  • 1 cup of oats
  • ½ tsp of Indigo Herbs Organic Raw Vanilla Powder
  • ½ cup of goji berries
  • 3 heaped tbsp. of Indigo Herb Raw Cacao Powder
  • 1-2 tsps of Indigo Herbs Rosehip Powder
  • 8 Medjool dates
  • For a further energy boost remove 1 date and replace with 1 tbsp. of organic virgin coconut oil.

Food processor

Method
Blitz in a blender until forms a ball
  1. In a bowl tip 1 cup of cashew nuts, then cover in water and ideally leave overnight or for a minimum of 3 hours.
  2. Cover a baking tray with baking paper.
  3. Once soaked drain and rinse the cashew nuts then tip into the food processor, blitz until smooth.
  4. Remove the stones from the dates and put dates in processor with the goji berries, blitz again then add oats, vanilla powder, cacao powder & Rosehip powder - whizz until fully blended together and the mixture is nearly smooth.
  5. To shape hearts place a strip of cling film onto your worktop, put the mixture on top, then fold over the cling film & roll out until about 1cm thick.
  6. Choose your cutter shape (it’s Valentines so we’ve gone for hearts) cut out and repeat steps 5 & 6 until your mixture is used up.
  7. Place in the fridge for 1 hour.
 
 
Mini White Chocolate & Strawberry Raw Cheesecakes
 
Our Clean Supper Club Mini White Chocolate & Strawberry Raw Cheesecakes are the perfect indulgent desserts, enjoy without guilt!

Serves
Makes either 1 using a 15cm/6” cheesecake tin or 10 small ones in a muffin tin, ideally loose bottomed tins.
 
Time to Prepare
35-40 minutes
 
 
Ingredients
 
 Base
  • 1 cup of almonds
  • 6 medjool dates (or 10 smaller dates)
  • ½ cup of desiccated coconut
  • 2 heaped tbsp. of Indigo Herbs Raw Organic Cacao Powder
  • 3 tbsp. coconut oil
 
Topping
  • 1 cup of soaked cashew nuts (soaked overnight)
  • 1 x 250ml packet of coconut cream
  • 100g of melted Indigo Herbs organic raw cacao butter
  • 3 medjool dates
  • Juice of ½ a lime
  • Zest of 2 limes
  • 6 large strawberries
  • 1 tsp of Indigo Herbs SuperVital powder
 
Equipment
Food processor
Cheesecake or muffin tin
Clingfilm
 
Method for Base

  • If creating mini cheesecakes we use this method for easy removal. Line the base and sides of the tins with cling film, cut out squares and press in, leave over hang. For the larger tin, line with baking paper and grease with coconut oil.
  • In food processor blitz all the ingredients together until the mix starts to bind. We like to retain a crunch to our base so don’t make the mix too smooth.
  • Then spoon base mix into tin to a depth of around 1cm and press down firmly.
  • Place in fridge for 30 minutes.
 
Method for topping
  • Drain and rinse the cashew nuts and place into the food processor and blitz until smooth.
  • Meanwhile gently melt the raw cacao butter in a bain-marie and then allow to cool slightly.
  • Pour the melted raw cacao butter and the remaining ingredients into the food processor. Blitz until smooth and creamy.
  • Remove the base from the fridge and spoon in topping until just below top of the tin.
  • Return to fridge for a minimum of 3 hours until set. If making in advance, store in freezer. Remove from freezer at least 1 hour before serving.
