Clean Supper Club Valentine's Day Collaboration with Indigo Herbs


 
This is the second of our Clean Supper Club blog posts with Indigo Herbs all based upon FOOD FOR LOVE.
 
As you will already have noticed, we both have a sweet tooth and refuse to miss out on great flavours and indulgent moments. 
 
Our 2nd FOOD for LOVE post has a fruity focus, all of which have positive benefits for boosting your Valentine’s Day!
 
We hope you will try out all 6 recipes, they really are not just for Valentines but delicious any time.

LOVE SMOOTHIE
LOVE Smoothie

Our Clean Supper Club LOVE Smoothie is made from ingredients that will boost your Valentine’s health (nudge nudge wink wink!).
 
Serves 2
 
Time to prepare
5 minutes
 
Ingredients
  • 1 stick of celery
  • Seeds from ½ - 1 medium Pomegranate
  • ½ cup of Oats
  • 2 tbsp of soaked Indigo Herbs Chia seeds
  • 200ml Coconut water
  • 2 tsps of Indigo Herbs SuperVital Powder
  • 1½ cups of chopped Watermelon
  • An inch chunk of ginger 
  • Juice of 1 Lime
 
Method
  1. Place 2 tbsp of chia seeds into a 250g jam jar fill with water, seal & soak in the fridge overnight. This will make plenty for use in smoothies or chia puddings. This recipe requires 2 Tbsp. of the soaked chia seeds.
  2. Put all the ingredients into your high-powered blender. Then blitz until everything is very smooth, it may take slightly longer to break up the pomegranate seeds.

Oat & Vanilla Raw Cookie Bites

Oat & Vanilla
Raw Cookies Bites


These Clean Supper Club bites are quick and scrumptious, ideal for giving an energy boost or just enjoying with a cup of tea. The raw mix is delightful on its own, coated in chocolate or mixed with cacao nibs.
 
Serves
Makes 18-20 cookie bites
 
Time to prepare
Cashews soaked overnight
15-20 minutes
 
Storage
Store in an airtight container and in the fridge if it’s warm. Keep for up to 7 days.
 
Ingredients

  • 1 cup of cashew nuts (soaked in water for 3 hours or overnight)
  • 1 cup of raw jumbo oats (if gluten intolerant buy gluten free)
  • ½ cup Desiccated coconut
  • ¼ - ½ tsp Indigo Herbs Vanilla powder
  • 6 Medjool Dates
  • 2-3tbsp of Indigo Herb Cacao Nibs – for choc chip bites
  • Indigo Herbs Raw Cacao Powder & Indigo Herbs Cacao Butter for a pure cacao melted chocolate dip.
  • 70%+ coco solids dark chocolate –for a quick melted dip.
 
 
Method
  1. In a bowl tip 1 cup of cashew nuts, then cover in water and leave overnight or for a minimum of 3 hours.
  2. Cover a baking tray with baking paper.
  3. Once soaked drain and rinse the cashew nuts and tip into the food processor, blitz until smooth.
  4. Remove the stones from the dates, put dates, oats, vanilla powder and the desiccated coconut in processor, blitz again, until they start to bind and nearly smooth in texture.
  5. For choc chip bites add 2-3 tbsp of Cacao Nibs and then give a quick pulse in the processor.
  6. To form bites take a heaped tsp. and roll into a ball between the palms of your hands. Then gently flatten until 1cm thick and place on tray and put in fridge for 1 hour. We generally make about 18.
  7. If you wish to cover half the bite with chocolate, melt 80g of 70%+ dark chocolate gently in a pan (as we are not looking for perfect gloss don’t worry about melting the chocolate in a bain-marie).
  8. Once melted, dip half the bite into the chocolate and put on the tray. Return to fridge for 30 minutes.
  9. For a pure raw cacao melted dip melt 25g of raw cacao butter in a bain-marie & add 2 tbsp of raw cacao powder. Stir. Once melted dip half the bite into the chocolate mix & repeat as above.

& Chia Dessert


A Clean Supper Club family favourite and the perfect guilt free dessert for ice cream lovers. Full of juicy strawberries and great to share.

Ingredients
    
Nice Cream
(makes 6 portions)
  • 1 cup of cashew nuts soaked in cold water for 3 hours or overnight
  • 3 frozen bananas
  • 250ml of coconut cream
  • 3 tbsp of Grade A maple syrup
  • ½ to 1 tsp of organic Indigo Herbs Raw Vanilla Powder
  • 250g of strawberries
 
Topping
(makes enough for 2)
  • 12 strawberries (keep 2)
  • Juice of 1 lime
  • 3 tbsp of soaked Indigo herbs Chia Seeds
  • Indigo herbs Raw Cacao Nibs to serve
 
Method
 
Nice Cream
  1. Remove bananas from freezer 30 minutes before use and leave on side.
  2. Drain and rinse the cashew nuts & add to the food processor & blitz until smooth.
  3. Add remaining ingredients and blend until smooth, this can take up to 10 minutes.
  4. Pour into containers, cover and place in freezer. Freezing will take 3 hours or more depending on container size.
 
Topping
  1. Place 2 tbsp. of chia seeds into a 250g jam jar fill with water, seal & soak in the fridge overnight. This will make plenty for use in smoothies or chia puddings. This recipe requires 3 tbsp. of the soaked chia seeds.
  2. Place strawberries into blend and blitz until smooth.
  3. Tip into bowl & add chia seeds, lime juice and stir well.
 
To Serve
  1. Take the Strawberry Nice Cream out of the freezer to allow it to soften for a while before scooping into glass jar, glass or a bowl.
  2. Top with chia & strawberry mix
  3. Scatter with raw cacao nibs and top with a strawberry.
