Lemon & Pumpkin Power Bars

These bars are perfect fuel for pre or post exercise. They are a delicious blend of lemon, walnuts and pumpkin seeds and created for Indigo Herbs using their organic pea protein powder. This is a complete protein and ideal for anyone in training, it also has no after taste so can go in anything from energy balls to smoothies.
10 minutes preparation
A loaf tin (22cm x 12cm)
Cling film or baking paper
200g of dates
100g of walnuts
25g of Pumpkin seeds
50g of desiccated coconut
Zest of ½ a lemon
2 tablespoons of chia seeds
1-2 teaspoons of organic pea protein powder
Line the loaf tin with cling film.
Remove and discard the stones from the dates and put the dates into the food processor, then blend until smooth.
Add the walnuts and lemon zest then blend into the dates.
Now add the pumpkin seeds and desiccated coconut; carefully partially pulse these into the mix to retain some texture.
Then sprinkle over the chia seeds and give a quick pulse just to mix them in.
Spoon mix into the lined tin and press down firmly to 2cm in thickness, smooth out and place in the fridge for at least 1 hour – alternatively roll them into bite size energy balls.
Remove from fridge, carefully lift out, remove cling film and slice into 6 bars.
Place in a lined airtight container and keep in the fridge for up to 1 week.
We like to wrap individual bars in the lined foil paper and take them out with us.
