Our Clean Supper Club families love this classic combination of lemon and poppy seed is enhanced with a touch of super powered turmeric. A crumbly cake with great flavours.
Makes 6 muffin sized 8 cupcakes
Equipment Muffin tray or cupcake tray Mixing bowl or Food processor Spoons Lemon squeezer Piping bag or palate knife Small saucepan
Ingredients 50gcoconut oil 125ml rice malt syrup 1tsp of bicarbonate of soda ½tsp of baking powder Zest of 1 lemon Juice of 2 lemons 1/4tsp turmeric powder 75g oat flour 75g ground almonds 1tbsp of poppy seeds 60ml of cold water
Heat oven to 180 ° C (fan) Bake time 20 -25 minutes
Place 1 cup of cashew nuts in a bowl, cover with cold water and leave overnight or for a minimum of 4 hours.
Preheat oven to 180 °C
Place cake cases into tray.
Measure out the coconut oil & rice malt syrup into a pan and heat gently until the coconut oil is melted and then stir together. Add lemon juice and zest and stir well.
Weigh out oats and then using a blender whiz them into flour.
In a large bowl place ground almonds, oat flour, bicarbonate of soda, baking powder, turmeric and poppy seeds. Stir together well -we use our food mixers for this.
Pour wet ingredients into dry and add 60ml of water, mix together well.
Spoon mix evenly into cases -until each is ¾s full.
Place on the middle shelf in the oven and bake for 20 minutes, check to see if they are golden brown – if not a further 3 to 5 minutes may be needed. Leave too partially cool in the tray and then remove to allow the cakes to fully cool on a wire rack.
Icing Method For icing, drain and rinse the cashew nuts and place in the food processer, blend until almost smooth. Melt the coconut oil (unless it’s a hot day) and then add the remaining ingredients (excluding lemon zest) to the blender and blend again, until completely smooth. Taste to check if you feel it needs to be sweeter or requires more lemon. This is down to personal preference.
Then spoon mix into a piping bag with nozzle of choice and pipe on to cake alternatively use a spatula knife and spread over. Then sprinkle with lemon zest.
For every day use we really enjoy these cakes without icing.
