Summer Smoothie Ice Lolly...it's child's play!

Hello there,
This is an Ice lolly Smoothie post we wrote for mini travellers...
 
We are 2, 40+ Mums (Claire & Sarah) between us there are 5 children, 2 husbands, 1 dog, 4 ducks & a rabbit. 2 years ago we set about resolving niggling weight gain, re balancing our health and well-being and then setting about making sure our realistic way of clean eating fitted with our busy family lives.
 
We met Karen through a very lovely mutual friend and Karen has been fantastic support as we’ve transferred our foodie lifestyle on to web sites, blogs and delved into social media.
 
Karen and her fab family from Mini Travellers are big smoothie fans! When they saw Clean Supper Club had been creating some summer smoothie fun by blending smoothies and turning them into smoothie ice-lollies Karen asked us to share a few flavour combinations that our children enjoy! So here are some of their favourites -they are full of fruit, some veg and no nasties, which means they can eat 3 a day, with out you worrying about added sugar or preservatives.

The Clean Supper Club children are smoothie fiends so we don’t often struggle to get fruit & veg into them. Well most days we don’t - occasionally every child likes to throw a vegetable in the works whilst you are tearing your hair out saying “but you liked it yesterday???”
 
They don’t need to know that there’s no processed sugar or that their tongues & teeth won’t turn blue (No thank you bubble gum lollies!) and they love to experiment with different flavour combinations; you’ll be amazed at what they’ll eat without noticing. Spinach is great in green lollies, mix it with lime and mango and carrots are a delicious compliment to oranges.

Once you’ve got the hang of single coloured lollies why not try creating rainbow layers and different drizzles and healthy but tasty 100 & 1000 alternatives (nuts, berries or dried fruit).
 
We all have lots of fun creating new flavour combinations and eating the rainbow!

Banana & Choc Dip Ice Lolly

Makes 3 x 85ml Lollies
Ingredients
2 bananas (they work best pre frozen, just peel, break into chunks and allow to freeze)
1 tsp vanilla extract
½ cup yogurt - natural full fat (For Dairy free use coconut yogurt)
1 tbsp of maple syrup

 
Topping
70 %+ Dark chocolate
handful of nuts – cashew, pistachio, almonds
Method
Put all ingredients in a high-powered blender or food processor and blitz until smooth.
Pour mix into moulds, insert sticks and put in freezer until frozen.
About 20 minutes before you remove the lollies from the freezer, melt the chocolate & chop your choice of nuts.
Once frozen remove from moulds (we find running mould under warm water helps to release lolly) –
Roll out a piece of baking paper, place lollies flat on to the paper.
Then using a fork drizzle melted chocolate over the lollies or alternatively dip them into the melted chocolate.
Then scatter the melted chocolate with nuts.
The chocolate will harden quickly because of the frozen lolly.
Eat immediately or place loosely back into the moulds and return to the freezer

Orange & Mango Split

Makes 3 x 85ml Lollies

Ingredients
For the orange blend…
1 orange, peeled and seeds removed
1 small carrot
Juice of ½ lemon
¼ cup water
 
For Mango layer
1 cup frozen mango

 
Mango layer…
Tip the cup of frozen mango and a splash of water into the blender or food processer and blitz until smooth (-ish) we like a couple of fruity bits.
Then spoon the puree into the tip of the mould, about 2.5cm.
Other ingredients...
Then blend together the remaining ingredients until smooth
and pour over the mango and into the mould.
Insert sticks and place in the freezer.


Blueberry Push Up Ice Lolly

Makes 3 x 50ml Lollies

Ingredients
Pure Blueberry Pop
Makes 3 x 50ml lollies
Juice of 1 lemon
1 Cup of blueberries
½ cup of coconut water or water


Method
Blitz for a solid blueberry lolly

Coconut water & whole frozen blueberries
No measures needed for this one simply fill the lolly mould with coconut water and poke in the blueberries.
Pop in freezer and leave overnight to freeze.
 
We like to make coconut water lolly's with mint leaves, strawberries & cucumber too!


So be ready for when the sun returns (we hope!) and enjoy a bit of messing about in the kitchen with the children creating super healthy treats!
