Goji Berry, Rosehip & Cacao Raw Cookie Bites CLEAN SUPPER CLUB
Our Clean Supper Club Goji Berry, Rosehip and Cacao Hearts taste so naughty, you won’t believe they are truly healthy!
Serves Makes around 15 hearts (depending on size of your cutters)
Time to prepare 15-20 minutes
Storage Store in an airtight container and in the fridge if it’s warm. Keep for up to 7 days.
Ingredients
1 cup of soaked cashew nuts (ideally soaked overnight or for a minimum of 3 hours)
1 cup of oats
½ tsp of Indigo Herbs Organic Raw Vanilla Powder
½ cup of goji berries
3 heaped tbsp. of Indigo Herb Raw Cacao Powder
1-2 tsps of Indigo Herbs Rosehip Powder
8 Medjool dates
For a further energy boost remove 1 date and replace with 1 tbsp. of organic virgin coconut oil.
Method Blitz in a blender until forms a ball
In a bowl tip 1 cup of cashew nuts, then cover in water and ideally leave overnight or for a minimum of 3 hours.
Cover a baking tray with baking paper.
Once soaked drain and rinse the cashew nuts then tip into the food processor, blitz until smooth.
Remove the stones from the dates and put dates in processor with the goji berries, blitz again then add oats, vanilla powder, cacao powder & Rosehip powder - whizz until fully blended together and the mixture is nearly smooth.
To shape hearts place a strip of cling film onto your worktop, put the mixture on top, then fold over the cling film & roll out until about 1cm thick.
Choose your cutter shape (it’s valentines so we’ve gone for hearts) cut out and repeat steps 5 &6 until your mixture is used up.
