Clean Supper Club



Quick, crunchy and vibrant this delicious salad has many health benefits.
Bring variety to the dish with assorted vegetable shapes, from grating, slicing, ribbons and raw courgette spaghetti!

Serves
4-6

Time to prepare
10 minutes

Equipment
Peeler
Box Grater
Food processor


Ingredients
½ red cabbage
1 medium courgette
1 large carrot (we love the bright colours of heritage carrots)
½ fennel bulb
A large handful of fresh coriander chopped

 
Method
Finely slice all the vegetables or use the grater blade on your food processor.
Courgettes are great spiralized and carrots look fun in long ribbons using your peeler.
 
Place all into a large serving dish & mix them altogether.
 

Clementine & Ginger Dressing
A refreshing dressing with a lovely warm twist.

Ingredients

4 tbsp extra virgin olive oil
1 tsp apple cider balsamic vinegar
Juice of ½ clementine
Small chunk of grated fresh ginger
1tsp. of raw honey
Pinch of salt & twist of black pepper

Method
Put all ingredients into a jam jar, with a tightly sealed lid
& give it a good shake to blend.
Will store in fridge.
